Zesty Italian Beef Sandwiches
I don't often buy roasts unless I can find one on sale for a good price. So usually, when I find one, I snatch it up and toss it into my freezer until I decide what meal I'm going to plan around it. This is one of my favorite things to do with them and to make it better, this is also one of those meals that was way better than I was expecting it to be the first time I tested it out.

Peanut Butter Heath Bar Cookies
For some reason, a lot of the baking I do tends to happen late at night. I'm talking past 11 o'clock kind of late here. I don't know if it is because the kids are in bed and I can do it without interruption or shooing hands away from cooling cookies or if it is more because I want a sweet late night snack with a nice cold glass of milk. Whatever the reason is, this is what my most recent session of late night baking produced. These sweet, slightly crispy but soft centered delights.

Double Chocolate Brownies
I don't know about you, but I happen to LOVE brownies. I find them super delicious and they're perfect with a cold glass of milk. Last night, I got a late night craving for some brownies, and had all the ingredients on hand for this recipe. It is so quick and easy to toss together and pop in the oven and it definitely satisfied the chocolatey goodness that my craving required. One of the best things about this recipe is that the ingredients are all things you probably keep on hand on a regular basis!

Corn Muffins
So, this will be the first post sans pictures. The next one I post may have cell phone pictures, but we'll see. The no-picture post may end up being better than cell shots, ha ha. I used to buy the cornbread mixes for whenever we were going to have cornbread, but I needed cornmeal for a recipe once and ended up buying a canister of it. I discovered a recipe on the back and decided to give it a try. Turns out, my husband much prefers this homemade kind of corn muffin as opposed to the mix you buy at the store in a box. And now, since I always have corn meal on hand, and the rest of the ingredients are typical kitchen "supplies", I can easily whip up some corn muffins to have with a meal without having to worry about if I have a mix in the cabinet.

Its Been a While
Well, lots of things have happened since I last posted a recipe...FOREVER AGO. And the recipe I last posted was one I made in Germany, we moved, and then I posted it while we lived in California. We now are back living in Louisiana, and we have a third child who is nearing his first birthday. Aside from being swamped with all the things that have been going on, another reason I haven't really posted any recipes in such a long time is that I busted my camera and haven't gotten around to buying a new one. Even a little point and shoot camera. In Germany, we went on a small vacation to the Bavarian Alps in Garmisch-Partenkirchen and while getting out of a van, I had forgotten that my camera was in my lap and not around my neck and got out. The camera dropped to the ground and cracked. So, even though I don't have a camera to post pictures of the recipes or progress pictures, I'm planning on going ahead and adding more updates. I've gotten requests from people that have said they don't mind if there aren't pictures.
In the future, I'll come back and add pictures, and probably replace pictures for past recipes as well. So, be on the lookout because I should have a new recipe headed your way very soon!
