Slow Cooker Creamy Chicken & Broccoli over Rice + Kiddo Lunch


Okay, so if you haven't noticed, we eat a lot of slow cooker meals. And chicken meals. With broccoli. But that's okay! Because each is different and wonderful and tasty. :) I love being able to put different spins on same main ingredients just by changing method of cooking or a few of the accompanying ingredients.


Speaking of eating the same things, my daughter had a peanut butter and jelly sandwich for lunch almost everyday for...a VERY long time. I was finally bored of making them! I've been expanding her lunch horizons (and it has been working!) through various methods. I picked up several little plastic tray plates at the Thrift Store for something like a quarter for five of them. I also try to make lunch surprising and fun sometimes!


I cut out these four animal shapes from the usual two slices of bread for a sandwich with these mini cookie cutters. I then peanut buttered and jellied them as usual. Gave her a couple of slices of cheese from the block, a mini box of raisins, and a handful of Annie's Organic Snack Mix. It is adorable little crackers and pretzels shaped like bunnies and carrots! I know this isn't really something I usually post, and it isn't even a recipe, but I figured that if it ended up helping someone, then it was worthwhile.

Also note, these cookie cutters will probably be making another appearance for a featured recipe. ;)


Creamy Chicken & Broccoli over Rice

Ingredients:
 Chicken breasts
1 (10.75 oz.) can condensed cheddar cheese soup
1 (10.75 oz.) can cream of chicken soup
1 1/2 cups chicken broth
1 tsp. salt
1 tsp. Cajun seasoning
1/4 tsp. garlic salt
2 cups broccoli
1 cup sour cream
Cooked rice

Directions:
1.) Place chicken in a lined/sprayed slow cooker.
2.) Combine soups, broth, and seasonings in a small bowl and then pour over chicken.
3.) Cook on low 6 hours.
4.) Remove chicken and shred.
5.) Replace chicken and add in broccoli. Cook for 30 more min.
6.) Stir in sour cream before serving and serve mixture over cooked rice.*

*Cook rice separately before crock pot meal is complete.

Pretty straightforward! Just make sure to NOT add the broccoli and sour cream at the beginning of cook time.
And it comes out really fantastic!
