Slow Cooker Beef Stroganoff

This is one of my favorite things to make in the slow cooker. It is so full of flavor and creamy and just YUM. I know Beef Stroganoff typically has mushrooms in it, but I don't like them, so I leave them out. If you'd rather yours have mushrooms, add in a drained, 6 oz. container of sliced mushrooms in when you are beginning.

Slow Cooker Creamy Chicken & Broccoli over Rice + Kiddo Lunch


Okay, so if you haven't noticed, we eat a lot of slow cooker meals. And chicken meals. With broccoli. But that's okay! Because each is different and wonderful and tasty. :) I love being able to put different spins on same main ingredients just by changing method of cooking or a few of the accompanying ingredients.

Turkey Burgers with Teriyaki Veggies


Pan-seared turkey burgers. Yummy stuff. I don't often cook with ground turkey...actually, I don't think I ever really have before. I know many people do, and that's great! I wanted to test it out myself. I love turkey anyway and I also wanted to see if my husband would notice a huge difference in flavor or anything. He didn't complain or anything, so whether he knew it was turkey or not...he liked it! :)

Slow Cooker Seasoned Cheesy Chicken & Broccoli


I will take this opportunity to say, that my family and I are now less than six months away from moving back to Stateside! And by less than six months away, I mean only one week off of six months, ha ha. But I am eager and looking forward to being there. We don't know where we'll be going yet, but I can't wait to find out. Hopefully we get where we're wanting. I am not, however, looking forward to the process of leaving. Getting our things packed, making the house cleaner than it has been the entire time we've lived here, staying in a hotel for a night or two, super-cleaning our car and shipping it...and then the super long plane ride and lugging two kids and a bag of luggage and carry-on per person through the airports...Yikes. Until then, though, I'll just keep gettin' cookin'. ;)

Shepherd's Pie


Shepherd's Pie is also known as "Cottage Pie" (as in a cottage for a the poor). The names are used pretty interchangeably, regardless of it the meat inside is beef or lamb. Some people say Shepherd's Pie is only used in regards to lamb, because shepherds keep watch over sheep rather than cattle.

Roasted Tilapia & Vegetables


Okay, so I might have accidentally lied when I said I'd start posting more frequently again. Apologies! I was preoccupied with preparing for my brother-in-law's arrival, the actual arrival and his stay here. I think that is a pretty good excuse. :)

Either way, I am going to try to start updating more regularly again (for real this time)! I have even more recipes saved up to post for ya'll. Speaking of my lovely readers, I'd like to welcome any new subscribers out there! I know there are a few new ones out there, so thank you! :)

Chicken Caesar Salad Pizza


I love chicken Caesar salads. LOVE them. If I go to a restaurant that has a bad chicken Caesar salad, I'm disappointed with the restaurant and won't go for a while, even if they have other things that are good. Even little starter Caesar salads must be good. :) And yes, I've gone to a place that had a bad chicken Caesar salad. The dressing tasted much more like mayonnaise than Caesar dressing. That was a sad night.

This never disappoints. Chicken Caesar salad, but in pizza form!

Tasty Mini Burger Patties


I am a candle addict.

I like to have several on hand, and unfortunately sometimes I burn them down wayyyy too fast. I don't even really want to think about how much I've spent on them, ha ha. Sometimes I magnetize to the candle section of a store when I walk past it. So I was pretty interested when a new friend told me she sold something called Scentsy. I checked it out, and it is awesome. IT SMELLS SO GOOD. There were so many different scents, and yes. Yes I did smell them all. I also ordered some. If you're curious, and are on facebook, you could 'like' her facebook Scentsy page and/or check out her page on the Scentsy site itself (and buy from her!). Pretty great stuff.

Speaking of great stuff, that's what this recipe is. Great stuff. Yep. Something that is flavorful, easy to make and that the toddler gobbles down is always classified as 'great stuff'.

Slow Cooker BBQ Chicken


For anyone who is married, you know it is a good tasting dinner when your husband (or wife!) requests a certain dinner to be made. :) I've had this one be requested by my husband. He asked for, "that tasty chicken with the barbecue sauce and stuff". I was happily compliant as it only has a few ingredients and is tossed into the slow cooker. It also goes with many different side pairings, so you change it up.

Speedy Ravioli Bake



I always try to decide what I'm going to cook for dinner the day before. That way, if there is anything I need to put in the fridge to defrost, I can do that and it will be ready by the time it is time to make dinner (larger pieces of meat I may sit out two days before). I already usually have a list of dinner possibilities that I can make, based on different things I recently got at the store, and so all I have left to do is pick one off of my list for the next night. Sometimes...I realize that I am missing some essential ingredients or something else comes up. At that point is when it is good to have things that you usually keep on hand, and things stuffed and saved in the freezer.

I recently had one of those days.

I found some refrigerated raviolis that I had put into the freezer to save. I always have several types of shredded cheese in the fridge and at least one jar of pasta sauce in the cabinet.

Slow Cooker Cube Steak & Gravy


Sometimes there are days where you just don't really get too much housecleaning done. Today was one of those days for me. But that's okay. The oldest, Natalie, had fun and I had a nice day. (I do need to buy a new vacuum though...) There are also some meals that come out tasting a lot better than you expect it to. Ones that you think will be just okay but come out amazing. Tonight was one of those meals. It was pretty amazing. So amazing, that I couldn't save this one for later and had to share it immediately. :)

No Peek Chicken



Toddlers are unpredictable. In what they say,how they act, and how they interact with people. This makes them funny and quite the little comedians, even if they aren't trying to be funny. I never know when my three-year-old will decide to jabber at someone who speaks to her, or completely ignore them. She has special names for some things. Like Cheetos are called Cheetah Chips and sweet peas are called Old McDonald peas (because the can had a picture of a farm in the background). I also never know when she is going to eat dinner decently or not. I always make her a plate to give her, but honestly don't expect her to eat much of it. But with this dinner, she ate a whole lot of chicken, some beans and some sweet peas. I was thrilled! So, on to the child-accepted recipe!

Easy Taco Melts



For someone who owns and drives a bright red car, it seems I'm surprisingly often NOT seen while on the road. The other day while out, at least three pedestrians casually strolled out in front of me (NOT on a crosswalk, ahhhh, pet peeve!) and a couple of cars tried to merge into me. Oh well. At least I pay attention, right?

Easy BBQ Chicken Melts


I've been busy! I've documented the progress of a few dinners I've made over the past several days, but I just haven't gotten around to posting all of them yet. :) I've had my mother and sister-in-law fly in to visit and assist with the new baby (who has decided to not yet make an appearance). Unfortunately, sister-in-law had to leave before the baby was born, but it was nice to visit and she should be back in the summer.

Old-Fashioned Cheesy Chicken Spaghetti

I have updated the "Intro" area here and am working on compiling a little list (that will probably gradually get things added to it) of different food substitutions and things of the like. I figured it would be a handy list, because sometimes I prefer a substitution instead of what is called for, or just don't have what is actually needed.
