Slow Cooker Italian Chicken
Ingredients:
4 Boneless skinless chicken breasts
1 (16 oz.) bottle Italian dressing
Italian seasoning
1/2 bag baby carrots
1/2 cup shredded Parmesan cheese
4 or 5 potatoes, cut into chunks
Directions:
1.) In a lined and/or cooking sprayed slow cooker, squirt a little dressing. Add two chicken breasts and pour Italian dressing over them. Sprinkle with Italian seasoning.
2.) Add next two chicken breasts and top with carrots. Pour more Italian dressing over the carrots and chicken breasts, then sprinkle with a little more Italian seasoning.
3.) Top with potatoes. Pour remaining Italian dressing over potatoes and sprinkle with a final dash of Italian seasoning.
4.) Cook on low 6 hours, topping with shredded Parm in last 10 min before serving.
Squirt in some Italian dressing in the slow cooker before anything else and then add two chicken breasts.

Add cut up potatoes and pour rest of Italian dressing over them and add a bit more Italian seasoning. Cook on low for 6 hours, topping with shredded Parm. 10 before it is time to eat.

I made this for dinner last night. It smelled heavenly while it was cooking and tasted even better! I definitely think this one will make my regular rotation. I especially loved how tender the chicken was! The only changes I made was that I cut up whole carrots instead of using baby carrots and used small red potatoes, since that's what I had. And I served it with buttered toast.
Yes, regular chopped up carrots instead of baby carrots will work in probably just about every recipe I post. I only use baby carrots because it is easier to have just a bag of them for snacks and for cooking!
