Spinach & Mozzarella Quesadilla


I have finally finished updating the photos from previous recipe entries, and so now feel comfortable to move forward and publish new recipes, once more. In the process, I accumulated many process pictures for recipes to post, so there shouldn't be a lack to post! :)

Spinach & Mozzarella Quesadilla

Ingredients:
Flour tortilla
Butter
Shredded mozzarella
Baby spinach
Kosher salt
Olive oil

Directions:
1.) Heat a few drizzles of olive oil in a small skillet over med. heat.
2.) Spread a thin layer of butter over entire tortilla.
3.) Sprinkle shredded mozzarella over half of tortilla.
4.) Place baby spinach over cheese.
5.) Add a bit more shredded cheese on top of baby spinach.
6.) Sprinkle a few pinches of kosher salt over spinach and cheese.
7.) Fold tortilla in half and place in heated skillet. Spin to coat in olive oil and let cook for several min. before flipping. Cheese should be slightly melted and down-side of tortilla slightly crisp and colored from olive oil. Spin and let cook several more minutes before flipping again, to finish crisping the original side down.
8.) Remove from pan, slice, and enjoy!

You'll easily be able to tell when olive oil is heated. It will become very aromatic and slide easily across the skillet.
A thin layer of butter (I call margarine butter...doesn't everyone?) over whole tortilla and shredded cheese over half.
Spinach. I usually prefer to pick off the stems, but neglected to this time.
Sprinkle kosher salt over cheese and spinach.  But not as much as in the picture. It just looked better with more in my old woman-esque hands. ^_^
Fold and plop in the skillet, spinning it to coat in olive oil.
Let it cook and flip. Let it cook and flip again. Let it cook and then take it out!
Cut it up and enjoy. Look at all of the cheesy goodness. This tastes so yummy and creamy and the kosher salt really brings it to the next level.
