Toddler Muffins


Sometimes toddlers can be picky. Sometimes they're weirdly picky. Example: I've had my 3 year old eat only the steamed broccoli or green beans on her plate, ask for more, eat that, MAYBE take a bite of her bread and that's it. Seems a little backwards to me! Usually kids don't want their veggies! I know for a while I didn't like green beans...that's putting it pretty lightly. I HATED green beans. Then one day when I was older something changed because now I love them. :) In any case, these are great for anybody, toddler or not, and are a great way to get little ones to eat their veggies, picky or not.


Toddler Muffins

Ingredients:
1/2 cup (1 stick) butter, softened
1/2 cup brown sugar
  2 bananas
5 oz. baby food squash (2 2.5 oz. containers)
2 carrots or 8 baby carrots, grated
2 eggs, beaten
1 cup all-purpose flour
1/2 cup oat bran
1 tsp. baking soda
1 tsp. pumpkin pie spice
1/2 tsp. salt

Directions:
1.) Preheat oven to 375°F. Grease 12 muffin cups or 24 mini muffin cups.
2.) In a large bowl, cream together butter and brown sugar until smooth.
3.) Mix in mashed banana, squash, grated carrots, and eggs.
4.) Stir in flour, oat bran, baking soda, pumpkin pie spice, and salt until just combined.
5.) Spoon batter equally into prepared muffin cups. Bake 15-20 min., until a toothpick poked in center comes out clean. Cool in pan 10 min. before moving to wire rack to cool completely. Store at room temp or freeze.

 I found oat bran on the isle with oatmeal, and right around the oatmeal.
 Cream together brown sugar and butter until smooth. I don't have a stand mixer or a hand mixer. Well, I do have a hand mixer, but it doesn't have as many speeds as it is labeled to have. It has one speed. Fling-Food-All-Over-The-Kitchen Speed. So if you don't have either, you can easily do this with a spoon. You just might have to work a little harder, is all.
 Mix in bananas, squash, carrots, and eggs. Then mix in the dry ingredients.
 Spoon the batter into your prepared muffin pan.
 Bake for 15-20 min. in your preheated, 375°F oven.
