Roasted Chicken Breasts w/ Lemon-Garlic Green Beans & Potatoes

Ingredients:
5 tbsp. olive oil
1 lemon, sliced
about 3 tbsp. lemon juice (juice from one lemon)
2 tsp. (4 cloves) garlic, minced
1 tsp. salt
1/2 tsp. black pepper
1 can cut green beans, drained (3/4 lb. fresh, trimmed green beans)
8 small red potatoes, quartered
4 skinless, boneless chicken breasts

Directions:
1.) Preheat oven to 450°F. Spray a baking dish with cooking spray. Chop potatoes. Slice lemon into wedges.
2.) In a bowl, combine olive oil, lemon juice, minced garlic, salt, & pepper. Sprinkle chicken with salt and pepper and place in dish. Pour green beans in dish around chicken. Add potatoes. Pour mixture over vegetables and meat. Place lemon wedges around pan.
3.) Roast for 45-50 min.

There are two cans of green beans pictured, but you really only need one. I would have preferred to use fresh green beans, as I think it would taste better, but the store was all out.
 Cut off any eyes or blemishes on the potatoes as you chop them.
Combine the ingredients for the mixture well!
Put thawed chicken in pan, and then green beans, followed by potatoes.
Pour mixture over meat and all veggies. Place lemon wedges on top of other food throughout the pan.
Roast at 450°F for 45-50 min. Make sure the chicken is done before you dig in!

I made this for dinner last night. I started a low carb diet yesterday, and this was perfect! (I didn't eat the potatoes, but Sean did). I looooved the flavor of the green beans! The lemon juice and garlic made them like little flavor-bombs! I will definitely be making this one again!
