Chicken Caesar Salad Pizza


I love chicken Caesar salads. LOVE them. If I go to a restaurant that has a bad chicken Caesar salad, I'm disappointed with the restaurant and won't go for a while, even if they have other things that are good. Even little starter Caesar salads must be good. :) And yes, I've gone to a place that had a bad chicken Caesar salad. The dressing tasted much more like mayonnaise than Caesar dressing. That was a sad night.

This never disappoints. Chicken Caesar salad, but in pizza form!

Chicken Caesar Salad Pizza

Ingredients:
A little over half container of Oscar Mayer Carving Board chicken
Bacon bits
Lemon juice
 Romaine lettuce (about half a bag)
3 mini pizza crusts
Shredded mozzarella
Shredded Parmesan
Caesar dressing
Olive oil

Directions:
1.) Preheat oven to 425°F.
2.) In med. bowl, mix chicken with some Caesar dressing.
3.) Pour a little olive oil in a small skillet and add chicken. Cook for 3-5 min.
4.) While that is going, prepare your pizza crusts. Sit the pizza crusts on a baking sheet. Squeeze Caesar dressing onto the center of each and, with the back of a spoon, spread around the rest of the pizza. This will be your pizza sauce.
5.) Top with mozzarella cheese and sprinkle with bacon bits. Put several pieces of chicken on each pizza.
6.) Put into oven and bake for 10 min.
7.) While the pizzas are cooking, prepare salad portion. Put romaine lettuce into the same bowl you mixed chicken in and pour a bit more Caesar dressing, just enough to coat the leaves, and some lemon juice. Mix. Add shredded Parm and mix again.
8.) Take pizzas out of oven and top with salad.

 Add dressing and mix.
 Cook in olive oil.

 Spread dressing around, then add mozz, bacon bits, and chicken. Put in 425°F oven for 10 min.
 While the pizzas are cooking, mix lettuce, dressing, lemon juice, and shredded Parm.

 Take pizzas out and top with salad!


This recipe is easily doable on a regular sized pizza crust, simply adjust the ingredients by adjusting accordingly.
