Chocolate Chunk Walnut Banana Bread


Trying something new with the blog pictures this time. If it works out and I like it better, which so far, I think I do, I'll probably back-track and re-upload the pictures from previous recipes to try to get them to look better. :)


Chocolate Chunk Walnut Banana Bread

Ingredients:
2 cups flour
1 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2 eggs
3 med. bananas, ripe and mashed
1/3 cup oil
1/4 cup milk
2-6 squares semi-sweet baking chocolate, coarsely chopped
1/2 cup chopped walnuts

Directions:
1.) Preheat oven to 350°F.
2.) Combine all dry ingredients, except chocolate and walnuts, in a large bowl.
3.) In another large bowl, combine stir together bananas, eggs, milk, and oil until well mixed. Add dry ingredients bit by bit. Stir until just moistened.
4.) Add in chocolate and walnuts.
5.) Pour into a greased 9x5 in. loaf pan.
6.) Bake 1 hour or until toothpick poked into the center comes out clean. Cool in pan 10 min. before removing from pan to cool completely on a wire rack.

Combine dry ingredients (except chocolate and walnuts) in a med. bowl.
Mix together the wet ingredients, until well combined.
Pour dry mixture into the wet mixture. I prefer to do it bit by bit. I just find it easier to mix that way.
Stir until just moistened.
Add in chocolate and walnuts.
Pour into greased loaf pan. Bake for 1 hour at 350°F.
Let cool for 10 min. before removing and placing on a wire rack to cool completely.
I enjoy banana bread as a breakfast with some coffee or as a late night snack with milk. :)

Sean loves bananas more than a monkey! Banana bread is one of his favorite snacks, so I made him your recipe this weekend. It turned out moist and delicious! I thought it was a nice touch to use chopped chocolate squares instead of chocolate chips.

Well good, I have several different banana bread recipes to share! This one is one of my favorites for sure though.
