Easy BBQ Chicken Melts


I've been busy! I've documented the progress of a few dinners I've made over the past several days, but I just haven't gotten around to posting all of them yet. :) I've had my mother and sister-in-law fly in to visit and assist with the new baby (who has decided to not yet make an appearance). Unfortunately, sister-in-law had to leave before the baby was born, but it was nice to visit and she should be back in the summer.

Easy BBQ Chicken Melts

Ingredients:
3-4 boneless skinless chicken breasts
3 tbsp. butter or margarine
1/2 cup Bisquick
1/4 cup milk
1/4 tsp. pepper
Big pinches of cayenne
Barbecue sauce
shredded Cheddar cheese

Directions:
1.) Heat oven to 425°F.
2.) In shallow dish, mix Bisquick, pepper, and cayenne. Pour milk into a separate shallow dish or a small bowl. Coat chicken w/ Bisquick mixture, then dip into milk and then again into Bisquick.
3.) Place chicken in greased baking dish. Put 1 tbsp. butter on top of each piece of chicken.
4.) Bake, uncovered, about 30 min. (until chicken is completely clear).
5.) Take chicken out and spoon barbecue sauce over each piece of chicken and sprinkle with shredded Cheddar cheese. Put back into oven for 5 min.


This has very easy prep.
Dip into dry mixture, milk, and then back into the dry mix.
Place chicken into greased oven dish and put a pat of butter on top of each.
After baking for 30 min at 450°F, spoon barbecue sauce over chicken and then sprinkle with shredded cheese.
Bake for another 5 min. and it is done!
I served it with steamed broccoli and Slow Cooker Ranch Potatoes.

I was surprised by the use of Bisquick in this recipe, because I usually use that ingredient just for pancakes, but it turned out great! It was simple to prepare and tasted delicious!

Then I'll have to help you broaden your Bisquick horizons! The recipe on the back of the box for drop biscuits is a good one. I know once I made some coffee cake with it as well.
