Apple-Berry Cobbler with Maple Cream


Well, I certainly have not updated in a while! I apologize for my absence and lack of recipes. I was induced a few weeks ago and gave birth to my lovely new daughter, Danielle, on the 26th of Feb. We've all been adjusting and getting used to a new schedule and working things out, so I haven't really bothered taking pictures of any actual meals I've cooked for a while now. I didn't forget about you all though! :)


Apple-Berry Cobbler with Maple Cream

Ingredients - Maple Cream:
1 tbsp. maple syrup
1/4 cup thawed whipped topping

Ingredients - Cobbler:
2 frozen buttermilk or southern style biscuits (from a 25oz. bag)
2 tsp. butter or margarine, melted
1 tsp. sugar
1/4 tsp. ground cinnamon
1 cup apple pie filling (from 21oz. can)
1/2 cup frozen mixed berries (from 12oz. bag) [Do not thaw]
sliced almonds (optional)

Directions:
1.) Heat oven to 375°F. Spray two 10oz. custard cups or ramekins with cooking spray. In a small bowl, gently fold syrup into whipped topping; cover and refrigerate until serving time.
2.) Place biscuits on microwavable plate. Microwave, uncovered, on 50% power 30-45 sec., turning halfway through the microwave time. The biscuits should still be cold for easier handling. Cut each biscuit into 4 pieces and place into a med. bowl. Drizzle biscuit pieces with melted butter; toss to coat. In a small bowl, mix sugar and cinnamon and then sprinkle over biscuits; toss to coat. Set aside.
3.) In a microwavable bowl, stir apple pie filling and frozen mixed berries together. Microwave, uncovered, 2-3 min., stirring once halfway through the microwave time, until mixture is hot. Immediately divide fruit mixture between custard cups or ramekins. Top each with 4 biscuit pieces. Sprinkle sliced almonds over tops, if desired.
4.) Place on baking sheet and bake 18-20 min. or until biscuits are lightly browned and fruit mixture is bubbly. Let stand 15 min. before serving. Serve warm and top with maple cream just before serving.

I didn't take progression pictures this time through, so no pictures of that this time. At this point, I consider it lucky to get through the process of cooking and Danielle doesn't want to be fed. In any case, I didn't want to have a partially used can of apple pie filling sitting in my fridge, so I used the entire can and added a bit more berries. If you decide to do this as well, another biscuit and ramekin or custard cup should be added, as well as a little bit more whipping topping and syrup (but not much on that). All of my filling fit into three cups, so it worked out great. We had this as a dessert, but I think it would make a pleasant breakfast as well.
