Easy Taco Melts



For someone who owns and drives a bright red car, it seems I'm surprisingly often NOT seen while on the road. The other day while out, at least three pedestrians casually strolled out in front of me (NOT on a crosswalk, ahhhh, pet peeve!) and a couple of cars tried to merge into me. Oh well. At least I pay attention, right?


Easy Taco Melts
 
Ingredients:
1 lb. ground beef
1/2 cup salsa
1/2 cup shredded Mexican blend cheese
1 can refrigerated biscuits
Directions:
1.) Heat oven to 375°F.
2.) Cook and drain the ground beef. Mix cooked beef and salsa. Cook over med.-high heat, stirring occasionally, until hot.
3.) Roll a biscuit out into a 6in. round and spoon about 1/3 cup of meat mixture and 1 tbsp. of cheese into center of each. Pull biscuit edges up and over the filling, pressing and pinching together to seal. Place, sealed side down, on a greased cookie sheet. Continue doing the same with the rest of the biscuits.
4.) Bake at 375°F for 9-14 min. or until golden brown.

Serve with additional salsa, sour cream, etc.!

Preheat to 375°F.
Brown and drain 1 lb. of ground beef and then add 1/2 cup of salsa, cooking until hot.
Flour the surface you're going to use to roll out the biscuits, your rolling pin (if using one), and the biscuit itself.
 Work the biscuit to stretch it out (it will like to shrink back a little bit every time you stop stretching it). I used the rolling pin and once it was stretched most of the way, used my fingers to pull it a little larger. Spoon about 1/3 cup of meat mixture and top with shredded cheese.
Place, seam side down, on a greased cookie sheet. Continue with all biscuits.
Cook in the preheated oven 9-14 min. or until golden brown.
