Honey Lime Chicken





Honey Lime Chicken

Ingredients:
1/4 cup extra virgin olive oil
Juice of 2 limes, plus zest of both (1/4 cup)
2 tbsp. honey
1/2 tsp. cayenne pepper
1 tsp. kosher salt
1 tsp. black pepper (best if freshly cracked)
boneless skinless chicken breasts

Directions:
1.) Combine all ingredients but chicken in large ziplock bag; mix well. Add chicken and coat. Place in fridge overnight or 6 hours.
2.) Heat grill to med.-high and grill until juices run clear (6-7 min. per side depending on thickness)

Combine all ingredients but chicken in a large ziplock bag and mix well. Add in chicken and coat completely. Stick it in the fridge to marinate for at least 6 hours, but even better if it is overnight.
Cook chicken on a grill heated to med.-high heat for 6-7 min. per side, depending on the thickness of your chicken. Just make sure the juices run clear! I used an indoor grill when I made this (just a little George Foreman, actually) and it was great.
