Brown Butter Strawberry-Banana Bread


I really enjoy banana bread and I love testing out different varieties and different recipes of banana bread. I've already posted Chocolate Chunk Walnut Banana Bread, and this is just the second of many more banana bread recipes.


Brown Butter Strawberry-Banana Bread

Ingredients:
1/2 stick (1/2 cup) unsalted butter
1 1/4 cups sugar
2 eggs
1 1/2 cups very ripe bananas, mashed (about 3 med. bananas)
1/2 cup buttermilk
1 tsp. vanilla
2 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup sliced strawberries

Directions:
1.) Heat oven to 350°F. Spray a loaf pan with cooking spray.
2.) In a small saucepan, heat butter over med. heat, stirring occasionally, until golden brown. Pour butter through a fine mesh strainer into a small bowl to remove any blackened bits.
3.) In a large bowl, mix butter and sugar together (if using an electric mixer, med. speed, 2 min.) until combined. Stir in eggs until mixed well.
4.) Add mashed bananas, buttermilk, and vanilla; stir until smooth. Add flour, baking soda, and salt; stir until just combined. Gently fold strawberries into the batter. Pour into prepared loaf pan.
5.) Bake for about 1 hour and 15-25 min. or until toothpick comes out clean.
6.) Cool in pan for 10 min. before removing and placing on a cooling rack. Cool fully, before slicing.

 Brown your butter! It gives a lovely flavor and while it is getting to the golden-brown color you want, it smells rather lovely. Strain it through a fine mesh strainer when you're finished, because there will be blackened bits.
 Combine sugar and butter and then add eggs.
  Stir until well combined.
 Add the mashed bananas, buttermilk, and vanilla. Then add in the dry ingredients and mix it up until just combined.
 Then fold your pretty sliced up strawberries gently into the batter.
Pour it into the pan you sprayed earlier.
 Bake for 1 hour and 15 min. Then check it. If you need more time, add depending on how much more it needs to cook, add about 10 min. or so. Once done, let it sit int the pan for 10 min. before moving it to a cooling rack so it can finish cooling.

I made your strawberry banana bread recipe yesterday to take to my in-laws house after church. Banana flavored anything is Sean's favorite food and he loves banana bread, so I was excited to have a new recipe to try. I loved the addition of strawberries! I'll definitely be doing that again!
